Form 1023/Incorporation

Form 1023 (the IRS form that's used to apply for tax-exempt, 501(c)3 status) has a spot to check whether your group is a Corporation, a Trust, or an Association.

Can I do this without incorporating? (Note that hypothetically, I can do this without any paperwork at all; churches are not required to file a form 1023. But I want official recognition, and our ministers to be officially acknowledged, so I'm going the paperwork route.) Anyone know what the real difference is between a "Corporation" and an "Association?" (They'll want more paperwork for an association, but it looks like I don't have to file it with state officials.)

I'd rather avoid the hassles of incorporation for now if that's feasible.
